You can enjoy the dishes cooked by the chef who had trained in Japanese cuisine for 12 years in Fukuoka. He is particularly confident in the flavoring and do not compromise on the way making the DASHI (broth). Kelp is from Hokkaido and he selects shavings of dried bonito. It takes a long time to cook at the temperature just before boiling to make it tasteful and soothing. All dishes using DASHI that brings out the umami taste are very mild.
